Cooking and Fat tires

Today was a planned day for me… some time last week I had planned to get some spare ribs and smoke them.  I had seen some good looking ribs at the store last week and figured if they still had some some I would get a couple of slabs and fix them and put most in the freezer for later…  I wasn’t feeling real pert this morning.  Yesterday and most of last night I had this fear or …. well my grandson left me a sign, this after he had some problems on a long car ride…

I had some stomach problems yesterday and then a lot of gas so I was not taking any chances either, and even had to get up nearly every two hours last night to be safe…still having some stomach cramps, Sherrie had it a couple of weeks ago, very same feelings and problems?  Anyway it was a good day to stay close to home, other than a quick trip to get the meat and then later for some parts…

I didn’t get my walk in for obvious reasons… but I got in quickly and got the ribs and picked up some chicken tenders as well as some bacon… I had seen some tenders last weekend that I thought I could duplicate or even get better?  I got the meat home and started the fixing part… mixing up the early swap and putting on the season…

I used the 3-2-1 recipe in the Treager book like last time but the ribs come out a lot different this time? think this bunch was a bit tough and for some reason the grill didn’t do a lot of cooking in the first 3 hours but granted I had two very large racks of ribs in there and it took a long time to get them up to temp once I got them started…

Going in the smoker and I had a rack between them in hopes that would let them cook, but that may have slowed them down too as there was not a lot of space between.

They came out ok, but again the grill (plenty of chips) didn’t want to heat up after it had been open while I took them out of the tinfoil?  and when it did catch it got real hot and they got a bit too dried in 40 minutes (not the one hour)… good think I checked them cause they were getting real done…Anyway they turned out ok.  Not as “fall of the bone” as the last batch and I like that better so will have to work on this a bit more… I don’t cook them enough to get good at it…

Now the other part was the chicken… I prepared them at the same time as the ribs…

I got chicken tenders… doctored them with some Backend Saskatchewan rub… then…

rolled them in bacon including some Cajun Red Bell peppers I am growing… them peppers at not terribly hot (to eat) but don’t rub your nose after handling them…  I also think that  using the thinner sliced bacon helped as it clung to the tenders real well and the bacon cooked up pretty good… see later…

ready for the grill, but I wrapped them and put them back in the frig till after the ribs were done…

Once the ribs were on I went back to town for lunch and picked up a 12 volt cigarette lighter plug (female) to put on my project box built the other day… got that at Wal-Mart and while there spotted this Fat Tire bike…

Now them tires are F  A   T!…

After I got back and swapped the ribs from the smoke portion to the wrapped portion… I did some plant checking… Anyone need some Spider plants?  I have starts all over the place…

On the right is the original Spider that Sherrie has had for along time… in the middle are starts for several other plants… the big pots are Citronella and those are just getting started I have one that is doing well started 2 weeks ago.

I also  see that the Schefflera  plant that was getting too spread out and “gangly” that I just cut up and put pieces in another pot, is sprouting… doing better from the 6 inch stub of stem than from the tops?

That one on right was totally buried and there is one on the left that is budding but not leafing like the right… I may just cut off some more stem and start another one or two?

Anyway, at about 6pm I started the fire again and got ready for the chicken to cook…

Chicken Tenders on the grill…

Finished product about 40 minutes later… Them was some of the best chicken fingers I have had in a long time… I thought they were better than the ribs and I really like ribs… yea we had a little rib meat (not a full rib but enough to taste them ) and then I had two of those tenders for dinner… note the red pepper hanging out… just enough spice and bite in the pepper to really make them good… of course according to my son, anything with bacon is good?  in this case…. I think he might even like it with the peppers… We put  some in the frig for later, and some in the freezer for much later… sure like my seal and sav machine… I tend to cook too much and now… I can just split it up and save half or more for later, especially when it was as good as the chicken… but we will have ribs for several meals too…

I then returned to my shop and put the 12 volt plug on one of the power boxes to put in the motorhome…  I need to now, figure out how and where to temporarily mount it so it can control the tire pressure system and the APRS radio… ?  The bands were not real good and the states I needed didn’t seem to be on the bands I need them so I shut down early… I may have to get to work on building an airplane next week?
