How many ways are there to make Chicken Tortilla soup?
I like a good tortilla soup and will order it at restaurants when it is available. I like the creamy version at McAlisters and think it may be tops on my list but I have had numerous other versions that were pretty good. Tonight I made one we bought at the Farmers Market last Saturday. It is a dry mix pack and you just add the chicken and cheese or tortillas…
I got chunk chicken and made the soup like it says, except I used Rotel tomatoes instead of diced tomatoes and that gave it a real kick… the taste was similar to some others but this one included rice so it was thick from the rice but still very tasty…
After dinner it has occurred to me that I have had chicken tortilla soup in maybe 25 different versions and just wonder how many other versions there are? The ingredients are generally the same… chicken, cilantro, garlic, etc… but the outcome is really different. Just thinking on the keyboard tonight.
