Weekend cooking going on here.

Saturday, we didn’t get much done… but did opt to run out to Carl Blackwell and test our new Emeriti cards… they weren’t checking ?  and we didn’t see a need to stop in at the rangers office either so still not sure they work to get access or just ? We were told they would but you can’t always believe some of the stuff your told.. it may be access but we still have to pay for vehicle entrance?  Anyway we stopped and picked up some needed items at the store and a plan was made to have “green chili chicken enchiladas” for dinner… so rather than cook one we spotted that they had some “on sale” rotisserie chickens for $2.49… hey that works for us… got one and we carved out about half of the meat (mostly breast meat) for the enchiladas… Sherrie , now that she is retired, is doing more cooking and this was her dish… I carved chicken and stirred the white cheese sauce…

ok the tortillas filled with chicken and fiesta cheese and some onion chopped… then put them in a dish for baking..

pour on the cheese sauce that has a can of green chilies in it and bake till they are good and hot… and oh boy… haven’t had that in years… several of my family doesn’t like or can’t eat cheese so we had not put this out…

Sherrie also was busy and made a big loaf of banana bread… goes great for desert with some butter and sugar cinnamon or honey on it… hot of course

Well, with that done for Saturday night we had half a chicken left so what to do?  hey… what about fixing up some stuffed jalapeno’s and re-heat the chicken on the wood grill?  so… Sunday I got some BIG jalapenos’ and some cream cheese… mixed up a half and half crème cheese and fiesta cheese for stuffing and….

on the grill as is the chicken to the left wrapped in foil to keep it moist…. set to 375+ and let it go for 30 minutes or more till the bacon is done…

well the cheese was pouring out but the bacon was not crispy like I want but it was done… just didn’t look crisp on top… but it was some good! Must have been damn good as I only got two of the peppers… but had to eat a bit more chicken… even with that we have maybe a cup of chicken left that will be used in ?  soup or gumbo?  not sure just yet…

I am feeling a trend here and figure I need to add a bit more time to my exercise times… so probably off to the gym I need to do… ha!
